The shape of this Victorinox Fibrox Chinese chef's knife looks like that of the cleaver, but make no mistake, this is not a cleaver! While the blade of a cleaver is robust, the blade of a Chinese chef's knife is wafer-thin and razor-sharp. And therefore not suited to chop with, but to finely cut vegetables and herbs and crush garlic.
Victorinox Fibrox handle: Ergonomic and comfortable
The handle is made from Fibrox. It has the qualities of rubber, but it is processed like plastic. As such Fibrox is quite stiff. The main advantage is that even if your hands are wet or if you are wearing gloves you don't have to worry about the knife slipping from your hands. The solid design ensures that food, mould or other dirt does not stand a chance. In addition, Fibrox knives are easy to clean because they are dishwasher proof. (We do, however, always recommend cleaning these knives by hand to maintain the sharpness of the edge).
Keep in mind that Fibrox is very light-weight. As such these knives are one of the lightest in our range. Because of the half tang and the light-weight handle the blade is the heaviest part of the knife. It makes the knife easy to use.
Victorinox Fibrox blade: razor-sharp
The blade is made from stainless steel and is razor-sharp upon delivery. If the blade becomes blunt you can easily sharpen it. Great!
